Pumpkin Pecan Chocolate Chip Cookie Recipe

Do you love freshly baked cookies? Then you will love this pumpkin pecan chocolate chip cookie recipe. This recipe makes only 18 cookies, making it ideal for a small family or a college student. I remember making some pumpkin cookies when I was raising my girls, and the recipe made six dozen cookies!

It was awesome when friends would drop by for a glass of milk and a few cookies. Nowadays, I like making smaller batches, and this cookie recipe fits the bill! The cookies are soft, chewy, and moist, gotta love it!

Kitchen Tools You Will Need

These are all the ones I use and LOVE!

This recipe is fantastic because you can stir the ingredients in a bowl, eliminating the need for a mixer. Boy, does this bring back memories of making cookies with my daughters! I remember my girls sitting on the kitchen counter while we measured the ingredients into the bowl. I love those memories!

Grab a medium bowl and combine the pumpkin, sugar, oil, and egg.

In a separate mixing bowl, sift together the flour, baking powder, cinnamon, and salt. Dissolve the baking soda in the milk.

Add all three mixtures together, then stir in the vanilla until mixed thoroughly.

Fold in the chocolate chips and pecans.

Spoon the batter onto a greased cookie sheet (about one tablespoon scoop).

Bake in a preheated oven at 350°F (176°C) for about 10 minutes. Serve and enjoy.

Why Do People Love Everything Pumpkin?

Every year, when the leaves start to turn and the air gets crisp, something magical happens: pumpkin season arrives! From lattes to muffins, candles to cookies, people can’t seem to get enough of that cozy pumpkin flavor. But what is it about pumpkin that captures everyone’s hearts (and taste buds)?

1. Comfort and Nostalgia
Pumpkin instantly reminds people of fall traditions, cozy sweaters, family gatherings, and Thanksgiving dinners. That comforting, familiar flavor brings back warm memories of home and the holidays.

2. Perfect Fall Flavor
Pumpkin’s mild sweetness and creamy texture make it the perfect base for cinnamon, nutmeg, and cloves, all those classic fall spices we crave as soon as the weather cools down. Together, they create that irresistible “pumpkin spice” flavor that feels like autumn in every bite.

3. Seasonal Excitement
Pumpkin only shows up for a few months each year, which makes it feel special. People look forward to pumpkin season the same way they anticipate Christmas lights or summer peaches; it’s a little reminder to slow down and enjoy the season.

4. Versatility in the Kitchen
From savory soups and roasted sides to sweet treats like pumpkin bread and cookies, pumpkin fits into just about everything. Its subtle flavor blends beautifully with chocolate, nuts, cream cheese, and spices.

5. Cozy Vibes Everywhere
Even outside the kitchen, pumpkin shows up in candles, décor, and body products because it instantly makes spaces feel warm and inviting. It’s the scent and flavor that define fall.

So, people love everything pumpkin, not just for the taste, but for the feeling it brings. Pumpkin season is comfort, nostalgia, and celebration all rolled into one delicious flavor.
